Pear and Brie Grilled Cheese & Butternut Squash Soup
Butternut Squash Soup Directions:
Melt butter in a large stockpot.
Sautée onion, and celery until soft and fragrant.
Add squash and stock. Simmer until squash is fork tender. Puree soup in batches in a blender.
Return to pot and season with salt and pepper.
Serve garnished with chopped pecans.
Pear and Brie Grilled Cheese Directions:
Brush melted butter on outside of bread.
Place 1 slice of brie on each piece of bread and top with 3-4 sliced pears.
Create a “sandwich”, and grill for 2-3 minutes on each side until cheese is melted and sandwich is golden brown.
